When is private cloud AI the right answer?

When the workload is not subject to strict data-residency or sovereignty constraints, time-to-first-prototype matters more than long-term portability, and the organization is comfortable with the vendor's access model. Private cloud AI is faster to start; the lock-in and access trade-offs show up later.

Doesn't a private VPC mean my data is private?

A private VPC means your data is isolated from other customers on the vendor's network. It does not mean the vendor cannot see your data. Cloud AI providers retain access for abuse monitoring, content filtering, and service operation.
